SMOKY BACON AND LEEK ROLL

Ingredients Weight Measure
Beef suet 12 oz.
Self-rising flour 21 oz.
Water to bind 13 oz.
Leeks, chopped 16 oz.
Lean bacon 16 oz.
TABASCO® brand Chipotle Pepper Sauce 4 Tbsp.

Method

  1. Mix the suet with the flour and add the water to make rough dough.
  2. In a pan, sauté the leeks and bacon. Add the TABASCO® Chipotle Pepper Sauce and set aside.
  3. Roll the suet pastry out into a large rectangle.
  4. Spread the filling evenly over and roll like a Swiss roll.
  5. Cover in silicone paper and foil and steam in a steamer until raised and cooked.
  6. Cut into slices and serve with parsley or cheese sauce.
