Ingredients Weight Measure
Butter 24 oz.
Mustard 3 tsp.
TABASCO® brand Original Red Sauce 4 Tbsp.
Worcestershire sauce 3 Tbsp.
Salt and pepper to taste
Petit poussins, butterflied and beaten flat 12 ea.
Small loaf of bread, crust removed, broken into small pieces 1 ea.


  1. Take 2/3 of the butter and allow it to soften, then mix in mustard, TABASCO® Sauce, Worcestershire sauce and some salt and pepper.
  2. Rub this mixture thoroughly over the butterflied poussins. Lay them in a large oven dish and cover with the bread pieces. Dot the remaining butter over the bread pieces.
  3. Roast in a preheated oven 350°F for 40 minutes. If the bread starts to burn, cover with foil.
  4. Serve with side salad and baby roast potatoes and rosemary.
