KIPPER PATÉ WITH A WHISKEY KICK

Ingredients Weight Measure
Kipper fillets 24 oz.
Butter 4 Tbsp.
Lemon 1 ea.
TABASCO® brand Original Red Sauce 4 Tbsp.
Worcestershire sauce 2 Tbsp.
Whiskey 4 Tbsp.
Double cream 7 Tbsp.
Pepper to taste
Extra butter 4 oz.
Lemon,wedges 12 ea.
Brown toast 24 slices

Method

  1. Cook kipper fillets according to instructions. Cool and remove any obvious bones.
  2. Melt the 4 Tbsp. butter and add to the fillets with lemon juice, TABASCO® Sauce, Worcestershire sauce and whiskey. Blend all to a smooth paste in a blender.
  3. Stir in the cream and pepper.
  4. Put into 12 small ramekin dishes, chill well.
  5. Melt the extra butter and pour over each. Allow to set.
  6. Serve with a lemon garnish and hot brown toast.
