Lime Butter

Salted butter, softened 3 sticks
Cilantro, fresh 4 Tbsp.
TABASCO® brand Garlic Pepper Sauce 5 Tbsp.
Limes, juice of 2 ea.

Tortillas

Ingredients Weight Measure
Flank steak 3 lbs. 12 oz.
Salt and pepper to taste
Yellow peppers 7 ea.
Red peppers 7 ea.
Mangoes 4 ea.
Spinach & vegetable–flavored tortillas 15 ea.
Chipotle & chili pepper–flavored tortillas 15 ea.
Sundried tomato & basil–flavored tortillas 15 ea.
Kiwis, sliced, for garnish 15 ea.
TABASCO® brand Chipotle Pepper Sauce 15 oz.
Boston lettuce 2 ea.

Chipotle Horsey Sauce

Ingredients Weight Measure
Mayonnaise 1 cup
Horseradish sauce 1/4 cup
TABASCO® brand Chipotle Pepper Sauce 1/4 cup
Lime 1 ea.

Method

  1. Boil flank steak for 2 hours with salt and pepper (if desired).
  2. Roast peppers. Let peppers sit in a covered bowl for 10 minutes to soften skins. Remove skins and seeds.
  3. Remove skin from mangoes. Slice and small dice mangos. Chop peppers into small dice. Mix together with mangoes. Remove all excess moisture.
  4. Microwave tortillas with approximately 1/4 tsp. Lime Butter on each. Cut each tortilla in half on a diagonal.
  5. To plate, use only half of each flavored tortilla per plate. Add 1 kiwi per each plate for garnish; place on one side of plate. On opposite side of plate, drizzle Chipotle Horsey Sauce.
