Ingredients Weight Measure
Any combination of calamari, shrimp, baby octopus, scallops, clams & mussels 5 lbs.
Olive oil 1 cup
Limes, juiced 4 ea.
TABASCO® brand Original Red Sauce (can use any flavor) 1 Tbsp.
Salt & pepper to taste
Celery, chopped 3 cups
Red onion, chopped 1-1/2 cups
Garlic, minced 1 tsp.
Parsley, chopped 1/2 cup
Leaf lettuce 12 leaves
Tropical fruits, for garnish as needed


  1. Blanch seafood 2 minutes in boiling water. Drain, plunge into cold water until chilled (5 minutes) and drain.
  2. Make dressing by whisking together olive oil, lime juice, TABASCO® Sauce, salt and pepper in a large bowl. Add seafood, vegetables and parsley. Mix well and serve immediately or hold for service (up to 2 days refrigerated).
  3. To serve, place a lettuce leaf on each chilled plate. Place salad on top of lettuce; garnish plate with fresh tropical fruits.
