CHIPOTLE-MANGO JALAPEÑOS

Mangoes, medium, finely diced 2 ea.
Sour cream 2 cups
Ginger, ground 1 Tbsp.
TABASCO® brand Chipotle Pepper Sauce 5 tsp.
Salt 2 tsp.
Pork, ground 2 lb.
Jalapeño peppers, medium 72 ea.
Mixed fruit 24 oz.

Method

  1. Preheat oven to 250°F, and move top rack to the highest position in the oven, close to the coil.
  2. Peel and finely dice the mangoes.
  3. Combine sour cream, mango, ginger, TABASCO® Chipotle Pepper Sauce and salt together and mix well. Leave mixture out to bring to room temperature.
  4. Cook ground pork in a sauté pan, taking care to break it up into small pieces.
  5. Meanwhile, half jalapeños lengthwise. Deseed and scrape out membrane. Place cut-side down on a baking sheet on top rack in oven. Bake for approximately 15 minutes (until slightly tender, but still firm).
  6. While still warm, combine cooked pork with sour cream mix and stir well.
  7. Stuff jalapeño halves with mixture and place back in oven to warm thoroughly.
  8. When ready to serve, place 12 pepper halves on each warmed plate in a circle, so the stem side is facing out and the tip facing in. Place a small dish filled with 12 oz. of mixed fruit in center and serve.
