Ingredients Weight Measure
Asian pears 10 ea.
Water 2 qts.
White wine 1-1/2 qt.
Fruit puree 12 oz.
Granulated sugar 6 cups
Orange zest 4 Tbsp.
Vanilla extract 1 Tbsp.
TABASCO® brand Original Red Sauce 4 tsp.
TABASCO® brand Chipotle Pepper Sauce as needed


  1. Peel, halve lengthwise and core the pears, leaving the stem intact where applicable. Set aside.
  2. Place the water, wine, fruit puree, sugar, orange zest and vanilla in a narrow saucepan. Bring the ingredients to a boil.
  3. Add the prepared pears to the mixture. Cut a piece of parchment paper to fit inside the saucepan on top of the pears. Place a lid on the pan and reduce the heat to very low.
  4. Gently simmer the pears in the liquid for 1 hour, or until tender throughout.
  5. Remove the pears from the poaching liquid. Set aside.
  6. Place the liquid back on the heat and reduce to a consistency to coat the back of a spoon (about half the original volume). Strain the liquid.
  7. While the liquid is still hot, add the TABASCO® Original Red Sauce.
  8. For each serving, ladle 3-4 oz. sauce on a plate. Cut a pear halve in 1/8" strips, keeping one end connected. "Fan" the pear and place on the prepared plate. Add 6 drops TABASCO® Chipotle Pepper Sauce to the plate as garnish.
