MARINATED SHRIMP AND PEAR SALAD WITH SPICY GARLIC VINAIGRETTE

Pineapple juice 4 oz.
Pear, sliced 1 ea.
Shrimp, 16/20, peeled and deveined, cooked 3 ea.
Leek, julienne 1/2 ea.
Arugula 4 oz.
Bean sprouts 1 oz.

Spicy Garlic Vinaigrette

Olive oil 3 oz.
White vinegar 1 oz.
TABASCO® brand Garlic Pepper Sauce 1 Tbsp.
Kosher salt 1 tsp.
Pepper 1 tsp.
Shallots, chopped 1/2 ea.
Dijon mustard 1 tsp.

Method

  1. Poach pear slices in pineapple juice until tender.
  2. For the Spicy Garlic Vinaigrette, whisk all ingredients together in a large bowl.
  3. Toss cooked shrimp in vinaigrette dressing. Marinate for 1 hour.
  4. Toss, each in a separate bowl, leeks, arugula and sprouts in the dressing.
  5. To serve, spread leeks at the bottom of the plate. Pile arugula on leeks, place pear slices around the center. Place the shrimp on top and hold in place with bean sprouts. Pour any remaining dressing over top of salad.

Yield: 1 salad
