Sixteen spice 2 cups
Red onion, 1/4" julienne 2 lbs., 4 oz.
Garlic cloves, sliced thin 24 ea.
Pomace oil 1 cup
Spinach 22 cups

Chipotle Mayonnaise

Sour cream 6 qt.
Mayonnaise 6 qt.
TABASCO® brand Chipotle Pepper Sauce 16 oz.
Lemon juice 12 oz.


  1. For Salmon, prepare salmon portions by rubbing sixteen spice on both sides.
  2. Pan-sear salmon for 3 minutes, presentation-side down. Flip and place in a 400°F oven for 8-10 minutes.
  3. In another pan, sauté onions and garlic in oil for 2-3 minutes. Add spinach and cook until spinach begins to wilt.
  4. For the Chipotle Mayonnaise, fold together sour cream and mayonnaise. Add TABASCO® Chipotle Pepper Sauce and lemon juice. Mix well and chill.
  5. To serve, place sautéed spinach, onions and garlic in the middle of the plate. Place salmon on top of spinach and drizzle with Chipotle Mayonnaise.
