CHEESE BLINTZES WITH SPICY LEMON CURD

Ingredients Weight Measure
Eggs 3 ea.
Sugar 3/4 cup
Salt 1/4 tsp.
Lemon juice 1/3 cup
TABASCO® brand Habanero Sauce 1/8 tsp.
Butter 4 Tbsp.
Cheese blintzes 12 ea.
Lemon zest 1 Tbsp.

Method

  1. Using a stainless steel bowl, whisk eggs, sugar, salt, lemon juice and TABASCO® Habanero Sauce over steam bath until light in color and frothy.
  2. Remove from heat and whisk in butter.
  3. Cool slightly and serve over blintzes.
