FRESH FRUIT PARFAITS WITH CLEAR RUM-PEPPER SAUCE

Ingredients Weight Measure
Sugar 1 cup
Water, divided 2-1/4 cups
Cinnamon stick 1 ea.
Butter 1 Tbsp.
TABASCO® brand Habanero Sauce 1/8 tsp.
Rum 1 Tbsp.
Cornstarch 1/2 tsp.
Fresh fruit, diced or sliced 24 oz.
Whipped cream, for garnish as needed
Mint, fresh, for garnish as needed

Method

  1. Combine sugar, 2 cups water, cinnamon, butter and TABASCO® Habanero Sauce in saucepan and bring to a simmer. Add rum.
  2. Dissolve cornstarch in remaining 1/4 cup water and stir into sauce, simmering for 1 minute. Remove from heat.
  3. Place fruit into parfait glasses and spoon sauce over fruit. Garnish with whipped cream and fresh mint.

Yield: 8 servings
