SWEET POTATOES WITH PEPPERED PINEAPPLE

Ingredients Weight Measure
Sweet potatoes 6 ea.
Butter 1 Tbsp.
Brown sugar 1 tsp.
TABASCO® brand Original Red Sauce 1/2 tsp.
Pineapple, cut into chunks 8 oz.

Method

  1. Peel and boil sweet potatoes, leaving them firm.
  2. Large dice potatoes and place in baking dish.
  3. Melt butter in sauté pan and add brown sugar; let sugar caramelize lightly.
  4. Add TABASCO® Sauce and pineapple and cook 2-3 minutes until liquid is almost evaporated.
  5. Add to sweet potatoes and bake 15-20 minutes.

Yield: 6-8 servings
