GRILLED VEGETABLE KABOBS WITH CHIPOTLE VINAIGRETTE

Ingredients Weight Measure
Zucchini 8 oz.
Red pepper 8 oz.
Mushrooms 8 oz.
Onion 8 oz.
Dijon mustard 1 Tbsp.
Olive oil, divided 1/3 cup
Lemon juice 1/2 tsp.
Red wine vinegar 1 Tbsp.
TABASCO® brand Chipotle Pepper Sauce 1 Tbsp.
Salt to taste
Sugar 1/2 tsp.

Method

  1. Large dice vegetables and arrange alternately on skewers.
  2. Add mustard to stainless steel bowl and slowly whisk in 1/2 of the oil.
  3. Slowly add lemon juice and red wine vinegar.
  4. Drizzle in remaining oil, TABASCO® Chipotle Pepper Sauce and salt.
  5. Marinate vegetables 30 minutes in viniagrette and grill 10-12 minutes, until lightly browned and hot. Brush again with vinaigrette and serve.
