Onion 8 oz.
Garlic 1 Tbsp.
Zucchini 8 oz.
Eggplant 12 oz.
Red pepper 8 oz.
Mushrooms 8 oz.
Tomatoes 1 cup
Olive oil 2 Tbsp.
Salt to taste
TABASCO® brand Garlic Pepper Sauce 1-1/2 Tbsp.
TABASCO® brand Bloody Mary Mix, Mildly Seasoned or Extra Spicy 1 cup
Romano cheese, grated 1/2 cup


  1. Large-dice vegetables and sauté all but eggplant and tomatoes in olive oil.
  2. Add eggplant, tomatoes, salt, TABASCO® Garlic Pepper Sauce and TABASCO® Bloody Mary Mix and mix well.
  3. Bake in 350°F for 30 minutes until thoroughly heated; top with grated Romano.

Yield: 8-10 servings
