YELLOW RICE WITH OLIVES, JALAPEÑOS, PEAS AND CARROTS

Ingredients Weight Measure
White rice 2 cups
Olive oil 2 Tbsp.
Turmeric 1/4 tsp.
Chicken stock 4 cups
Green olives, sliced 1/4 cup
Jalapeño, seeded, diced 1 ea.
Peas 1/4 cup
Carrots 1/4 cup
TABASCO® brand Original Red Sauce 1 tsp.
Salt to taste

Method

  1. Heat olive oil in saucepan and add rice; stir for 1 minute until rice is coated.
  2. Add all remaining ingredients and simmer until liquid is evaporated and rice is tender.

Yield: 8-10 servings
