COUS-COUS WITH RED PEPPER AND APRICOTS

Ingredients Weight Measure
Butter 1 Tbsp.
Cous-cous 10 oz.
Red pepper, small dice 1/2 cup
Dried apricots, small dice 1/4 cup
Vegetable or chicken stock 2 cups
Salt to taste
TABASCO® brand Original Red Sauce 1 tsp.

Method

  1. Melt butter and mix in cous-cous, red peppers and apricots.
  2. Add stock, salt, and TABASCO® Sauce, and bring to a boil.
  3. Remove from heat and let stand 5 minutes; mix and serve.
