ROAST BEEF AND HAVARTI CHEESE WITH RED ONION MARMALADE

Olive oil 1 Tbsp.
Red onion 16 oz.
Vinegar, balsamic 2 Tbsp.
TABASCO® brand Original Red Sauce 3/4 tsp.
Brown sugar 1 Tbsp.
Orange juice 2 Tbsp.
Salt 1/4 tsp.
Roast beef 24 oz.
Havarti cheese 8 oz.
Pumpernickel bread 16 slices

Method

  1. In a large sauté pan, heat oil over medium-high heat. Add onions and cook, stirring frequently, for 15 minutes or until soft.
  2. Stir in vinegar, TABASCO® Sauce, brown sugar, orange juice, and salt. Cook 15 minutes, stirring frequently. Remove and cool.
  3. For each serving, assemble roast beef and cheese onto bread slice, top with 2 Tbsp. of the marmalade and another slice of bread.

Yield: 8 servings
