Ingredients Weight Measure
Sugar 2 cups
Baking soda 7 tsp.
Salt 1/4 tsp.
Eggs 4 ea.
Flour 3 cups
Vegetable oil 1/2 cup
Buttermilk 3/4 cup
TABASCO® brand Original Red Sauce 1/4 cup
Pineapple, diced 4 oz.
Coconut, shredded 4 oz.
Dried apricots, chopped 4 oz.
Walnuts, chopped 4 oz.


  1. Preheat oven to 275°F. Use middle rack of oven. Line 2 8"x4"x3" loaf tins completely with buttered parchment paper.
  2. Blend sugar, baking soda and salt until well blended. Pour the mixture into a large bowl and add eggs one at a time, beating well after each one.
  3. Add flour gradually, while continuing to mix until well blended. Add oil, buttermilk and TABASCO® Sauce. Mix for 2 minutes, until well blended and smooth. Add fruit and nuts and fold into mixture.
  4. Pour the batter into the tins. Lift each tin an inch or two; then drop to eliminate air bubbles in the batter.
  5. Place tins in oven and bake for 1-1/2 to 2 hours, or until done in the center.

Yield: 12-20 servings
