Beef tenderloin, cut into 6-oz. pieces 7.5 lbs. 20 ea.
Carrots, julienne 3 lbs.
Snow peas, cleaned 3 lbs.
Red onions, cut in small wedges 5 lbs.

Fish sauce 1 qt.
Garlic powder 1 lb.

Stir-Fry Sauce

Oyster sauce 12 oz.
TABASCO® brand Original Red Sauce 15 oz.
Fish sauce 5 oz.

Crème fraîche 1 cup
Horseradish 4 Tbsp.


  1. Mix all Marinade ingredients.
  2. Marinate beef for minimum of 30 minutes.
  3. Combine all ingredients for Stir-Fry Sauce. Stir-fry carrots, snow peas and onions in wok. Finish vegetables with Stir-Fry Sauce.
  4. Grill beef to desired tenderness.
  5. For Garnish, mix crème fraîche and horseradish together.
  6. To serve, place vegetables in center of plate and rest meat on top of vegetables. Place small amount of horseradish mixture on top of beef.
