Marinade Base

Lime, large 1 ea.
Kiwis, very ripe 2 ea.
Cloves, fresh ground 1/4 tsp.
Cinnamon, fresh ground 1/4 tsp.
Black pepper, fresh ground 1 tsp.
Coconut milk 1 can
Allspice 1 tsp.
Dark rum 1/4 cup
Coconut extract 1 tsp.
Salt to taste

Marinade Structure

Mango juice 2 cups
Papaya juice 1 cup
TABASCO® brand Original Red Sauce 2 Tbsp.
TABASCO® brand Green JalapeƱo Pepper Sauce 2 Tbsp.
TABASCO® brand Chipotle Pepper Sauce 1/4 cup

Grilling Components

Ingredients Weight Measure
Pork sirloin, boneless, (or boneless, skinless chicken breast) 4 lbs.
Vegetables and fruits, fresh (such as zucchini, cherry tomatoes, mushrooms, onions, bell peppers) 6 lbs.
Salt as needed


  1. Zest and juice lime. Peel kiwi and puree with lime zest and juice.
  2. Grind spices.
  3. Mix all Marinade Base ingredients in a non-aluminum bowl.
  4. Add ingredients for Marinade Structure and mix well.
  5. Cut pork or chicken into 1" cubes. Pour marinade over meat.
  6. Marinate 1 hour. Cut vegetables and fruits into 1" chunks.
  7. Drain meat. Assemble skewers, alternating meat, vegetables and fruits as desired.
  8. Grill, brushing components with marinade occasionally. Adjust seasoning with salt as needed. Serve.

Yield: 12-16 servings
