Chicken Marinade

Ingredients Weight Measure
Mangoes, chopped 2 ea.
Kiwis, chopped 2 ea.
Limes, juiced 2 ea.
Pineapple juice, canned 1 large can
Chickens, whole, cut into serving-sized pieces 2 ea.

Grilling Sauce

Ingredients Weight Measure
Apple cider vinegar 1 cup
Ketchup 2 cups
Worcestershire sauce 3 Tbsp.
TABASCO® brand Original Red Sauce 1-1/2 Tbsp.
Seasoned pepper 1 tsp.
Seasoned salt 1 tsp.
Italian seasoning 1 Tbsp.
Extra virgin olive oil 1/4 cup
Tennessee whiskey 1/2 cup
Light brown sugar 3 Tbsp.
Onion, large, finely chopped 1/2 ea.
Garlic cloves, finely chopped 3 ea.


  1. Combine all ingredients for the Chicken Marinade. Marinate chicken in zip lock bags for 3-6 hours in the refrigerator.
  2. Combine all ingredients except whiskey for the Grilling Sauce in a 1-1/2 qt. saucepan. Simmer over low heat, until onions are clear (approximately 1 hour). Add the whiskey about 15 minutes before removing from heat.
  3. Grill chicken and brush with grilling sauce before cooking is done.

Yield: 12-20 servings
