YUCCA-CRUSTED CHICKEN AND PAPAYA FRITTERS

Ingredients Weight Measure
Chicken meat, cooked, chopped 3 cups
Cheddar cheese, grated 1-1/2 cups
Monterey Jack cheese, grated 1-1/2 cups
Papaya, small diced 1-1/2 cups
Tomatoes, ripe, small diced 1/2 cup
Green pepper, small diced 1/2 cup
Cumin, ground 1 Tbsp.
Cilantro, chopped 1/4 cup
TABASCO® brand Green Jalapeño Pepper Sauce 5 Tbsp.
Salt 1/2 tsp.
Yucca, grated 4 cups

Method

  1. Combine all ingredients, except grated yucca.
  2. Refrigerate for 60 minutes.
  3. Shape into 1" balls.
  4. Roll the fritters in grated yucca until well coated. Deep-fry at 350°F for 4 minutes, or until golden brown.
