SOUTH ISLAND MACADAMIA-CRUSTED CATFISH

Ingredients Weight Measure
Catfish fillets, 3-5 oz. 12 ea.
Yellow mustard 6 Tbsp.
TABASCO® brand Original Red Sauce 6 Tbsp.
Self-rising flour 1 cup
Breadcrumbs 2 cups
Macadamia nuts, ground 1 cup
Canola oil, for gilling as needed

Method

  1. Spread fillets, on each side, with mixture of mustard and TABASCO® Sauce. Set aside.
  2. Combine flour, breadcrumbs, and macadamia nuts.
  3. Coat each fillet with dry ingredients. Spread canola oil on grill.
  4. Cook catfish about 7 minutes on each side, or until fish flakes easily and is golden brown.

Yield: 12 servings
