Wings

Chicken wing sections 48 ea.
Seasoned salt 2 Tbsp.
TABASCO® brand Garlic Pepper Sauce to taste
Oil, for frying as needed

Wing Sauce

Ingredients Weight Measure
Honey 1 cup
Garlic cloves, smashed and minced 4 ea.
Dijon mustard 1 Tbsp.
TABASCO® brand Garlic Pepper Sauce 1/2 cup

Dipping Sauce

Ingredients Weight Measure
Soy sauce, brewed 2 cups
Clover honey 2 cups
Rice wine vinegar 1 cup
Sesame oil 1 cup

Garnishes

Scallion brushes as needed
Carrot flowers as needed

Method

  1. For the Wings, heat deep-fry oil to 350┬░F. Fry chicken sections for 13 minutes; remove from oil.
  2. For the Wing Sauce, mix together all ingredients. Toss cooked wings in sauce. Remove wings from sauce and place on grill for 2 minutes on each side, until bubbly.
  3. For the Dipping Sauce, whisk together all ingredients.
  4. Serve Wings hot, with Dipping Sauce on the side. Garnish with scallion brushes and carrot flowers.
