SEAFOOD KABOBS WITH MANGO SALSA

Seafood Kabobs

Ingredients Weight Measure
Shrimp, jumbo, peeled, deveined 2 lbs.
Sea scallops 2 lbs.
Coconut milk 1/2 cup
Cilantro, chopped 2 Tbsp.
TABASCO® brand Green Jalapeño Pepper Sauce 2 Tbsp.
Fish sauce 1 Tbsp.
Kosher salt 1 tsp.
Chili powder 1 tsp.
Lime, juice and zest of 1 ea.

Mango Salsa

Ingredients Weight Measure
Red onion 1/2 ea.
Mangoes, ripe 2 ea.
Red pepper, small 1 ea.
Cilantro, chopped 1 Tbsp.
TABASCO® brand Green Jalapeño Pepper Sauce 2 Tbsp.
Lime, juice and zest of 1 ea.

Method

  1. For Seafood Kabobs, alternate scallops and shrimp on bamboo skewers.
  2. Mix together coconut milk, cilantro, TABASCO® Green Jalapeño Pepper Sauce, fish sauce, salt, chili powder and lime juice and zest. Pour over skewers and marinate 1-2 hours.
  3. Grill skewers over charcoal or gas grill until shrimp are pink.
  4. For the Mango Salsa, dice red onion, soak in cold water for 10 minutes and drain. Dice mangoes and red pepper. Mix together all ingredients and refrigerate at least 1 hour to blend flavors.
  5. To serve, spread salsa on platter and put seafood skewers over salsa.

Yield: 12-20 servings
