Crab Cakes

Ingredients Weight Measure
Mayonnaise 1 cup
TABASCO® brand Original Red Sauce 2 Tbsp.
Chili powder 1 tsp.
Old Bay seasoning 2 tsp.
Mustard, dry 2 tsp.
Eggs, whole 4 ea.
Worcestershire sauce 4 tsp.
Scallions 2 bunches
Poblano peppers, roasted 3 ea.
Italian parsley, chopped 1 bunch
Tequila 1-1/2 oz.
Lemons, juice of 2 ea.
Salt and Pepper to taste
Crab meat, jumbo lump 4 lbs.
White breadcrumbs, fresh 4 cups

Papaya Mango Salsa

Ingredients Weight Measure
Papaya, small dice 1 ea.
Mangoes, small dice 2 ea.
Red bell pepper, small dice 1 ea.
Onion, red, minced 1 ea.
Cilantro, chopped fine 1 bunch
TABASCO® brand Green JalapeƱo Pepper Sauce 1 Tbsp.
Sugar 2 tsp.
Lime, juice of 1 ea.
Rice vinegar 2 oz.
Corn oil 6 oz.
Salt to taste
White pepper to taste


  1. For the Crab Cakes, combine all ingredients, except for the crabmeat and breadcrumbs.
  2. Mix well. Gently fold the crabmeat and breadcrumbs into the dressing.
  3. Let set 5 minutes and then form the mixture into 4 oz. cakes.

Yield: 12 servings
