Mahi Mahi

Mahi mahi fillets, 4 oz. 12 ea.
Salt and pepper to taste
Tortilla chips, crushed 2 cups
Peanut oil 1/2 cup

Pineapple Chipotle Beurre Blanc

Pineapple juice 1 cup
TABASCO® brand Chipotle Pepper Sauce 1/4 cup
Shallots, chopped 2 Tbsp.
Heavy cream 2 Tbsp.
Butter, cold 1/2 lb.


  1. For Mahi Mahi, season fish with salt and pepper. Top each fillet with tortilla crumbs and set aside.
  2. Heat a large sauté pan, and add half of the oil. Wait until oil is very hot; then add 6 fillets, crusted-side down, into the pan. Sear until well browned. Remove fish to a sheet pan and discard oil.
  3. Wipe pan, place back on heat and add remaining oil. Repeat the process to sear the remaining 6 fillets.
  4. Place all fish on sheet pan, and roast in a 400°F oven for 4 to 5 minutes, or until cooked through.
  5. For the Pineapple Chipotle Beurre Blanc, in a nonreactive pan, place pineapple juice, TABASCO® Chipotle Pepper Sauce and shallots. Reduce to 1/4 cup. Add cream. Whisk in cold butter until incorporated. Hold warm until service.
  6. To serve, place fish on warm plates and top with Pineapple Chipotle Beurre Blanc.
