Tuna and Cucumber Boats

Ingredients Weight Measure
Tuna, 4-oz. portions, trimmed into triangle shapes 4 lbs.
Sesame seeds, toasted 6 oz.
Hot house cucumbers, cut in half, trimmed into boat shapes, with 4 cutouts for tuna 6 ea.
Chives, for garnish as needed

Tropical Fruit Salsa

Ingredients Weight Measure
Pineapple, peeled, brunoise 1/2 ea.
Kiwi, peeled, brunoise 5 ea.
Mangoes, peeled, brunoise 2 ea.
Mint, julienne 2 oz.
Limes, juice of 2 ea.
Red bell pepper, brunoise 1 ea.
Salt to taste

Jalapeño TABASCO® Cucumber Sauce

Ingredients Weight Measure
Hot house cucumbers, seeded 2 ea.
Dill 2 oz.
TABASCO® brand Green Jalapeño Pepper Sauce 1 tsp.
Salt to taste

Classic TABASCO® Roasted Red Pepper Puree

Ingredients Weight Measure
Red bell peppers, roasted, seeds and skin removed 2 ea.
TABASCO® brand Original Red Sauce 1 tsp.
Salt to taste

Mango Sauce

Ingredients Weight Measure
Mangoes, diced 4 ea.
Water 1 cup
Salt to taste
Sugar as needed

Method

  1. For the Tuna, cover tuna with sesame seeds and sear on three sides.
  2. For the Tropical Fruit Salsa, mix all ingredients together and reserve.
  3. For the Jalapeño TABASCO® Cucumber Sauce, puree all ingredients together in a blender for 30 seconds. Adjust seasoning.
  4. For the Classic TABASCO® Roasted Red Pepper Puree, puree all ingredients together in a blender for 30 seconds.
  5. For the Mango Sauce, puree all ingredients together in a blender until smooth. Add sugar, if necessary, to taste.
  6. For each serving, place mango sauce on bottom of plate. Place Cucumber Sauce in center of plate. Place Tropical Fruit Salsa on top of Cucumber Sauce. Place Cucumber Boat on top of salsa. Insert Tuna triangles into the cutouts in the Cucumber Boats. Place Red Pepper Puree around the boat, in diagonal lines. Garnish with chives.
