CHICKEN PANINI WITH ROASTED PEPPER, FENNEL, MANCHEGO CHEESE AND GARLIC AIOLI

Mayonnaise 1 cup
TABASCO® brand Garlic Pepper Sauce 1 Tbsp.
Olive oil 1 Tbsp.
Salt 1/4 tsp.
Chicken breast, 3 oz., cooked, sliced 24 oz.
Red peppers, roasted, sliced 16 oz.
Fennel, bulb only, shaved thinly 8 oz.
Manchego cheese 8 oz.
Whole grain wheat bread, thick slices 16 ea.

Method

  1. Mix mayonnaise and TABASCO® Garlic Pepper Sauce together; slowly drizzle in olive oil. Add salt.
  2. Place 3 oz. chicken, 2 oz. pepper, 1 oz. fennel, and 1 oz. cheese on 1 slice of bread.
  3. Spread other slice with mayonnaise mixture and place on bottom slice. Place sandwich on Panini press for 3-4 minutes until sandwich is hot and cheese is melted.

Yield: 8 servings
