CUBAN PORK AND SWISS WITH GREEN OLIVE TAPENADE

Green olives, pitted 1 cup
Garlic cloves, chopped 2 ea.
Anchovy paste 1/4 tsp.
Capers 1 Tbsp.
Lemon juice 2 tsp.
TABASCO® brand Original Red Sauce 2 Tbsp.
Cuban roast pork 2 lbs.
Imported Swiss cheese 16 oz.
Cuban bread, 8" slices 8 ea.

Method

  1. To make tapenade, using a food processor, combine olives, garlic, anchovy, capers, lemon juice and TABASCO® Sauce. Pulse to incorporate the ingredients into a chunky blend but do not overprocess or puree.
  2. Portion pork and Swiss cheese onto Cuban bread and top with a generous spread of tapenade.

Yield: 8 servings
