HUEVOS RANCHEROS WRAP

Ingredients Weight Measure
Flour tortilla, 8 in. 8 ea.
Eggs 8 ea.
Milk 1/2 cup
Butter 1 Tbsp.
Green peppers, diced 12 oz.
Onions, diced 12 oz.
Black beans, cooked 4 oz.
TABASCO® brand Chipotle Sauce 3 Tbsp.
Cheddar cheese, shredded 8 oz.
Sour cream 4 Tbsp.
Salt To taste

Method

  1. Melt butter in saucepan and sauté onions and peppers for 2-3 minutes. Add black beans, TABASCO® brand Chipotle Sauce, and salt. Return to a simmer, mix well, and remove from heat.
  2. Mix eggs with milk and scramble.
  3. Warm tortillas on grill and divide egg mixture between tortillas. Top eggs with 2 Tb blackbean/pepper/onion mixture.
  4. Add 2 Tbsp cheddar and ½ Tb sour cream to each wrap and fold.

Yield: 8 ea.
