BACON AND EGG PO' BOY

Ingredients Weight Measure
Mayonnaise 1/2 cup
TABASCO® brand Original Red Sauce 1 Tbsp.
Eggs 16 ea.
Milk 1/2 cup
Bacon, cooked, diced 24 oz.
Sub roll, 6 in., cut horizontally 8 ea.
Shredded lettuce 2 cups
Salt to taste

Method

  1. Combine mayonnaise and TABASCO® Sauce.
  2. Mix eggs and milk together and scramble with bacon.
  3. Spread top and bottoms insides of sub rolls with mayonnaise mixture and divide bacon and egg mixture among roll bottoms.
  4. Top with shredded lettuce, place tops of rolls on and serve.

Yield: 8 servings
