SAUSAGE AND EGG PO' BOYS

Ingredients Weight Measure
Mayonnaise 1/2 cup
TABASCO® brand Original Red Sauce 1 Tbsp.
Eggs 16 ea.
Milk 1/2 cup
Sausage patties, cooked, diced 24 oz.
Sub roll, 6" 8 ea.
Shredded lettuce 2 cups
Salt to taste

Method

  1. Combine mayonnaise and TABASCO® Sauce.
  2. Mix eggs and milk together and scramble with sausage.
  3. Slice sub rolls for sandwiches, spread each inside with the mayonnaise mixture and divide sausage and egg mixture among bottom halves of rolls.
  4. Top with shredded lettuce and top halves of rolls and serve.

Yield: 8 servings
