Ingredients Weight Measure
Red pepper, medium dice 2 cups
Red onion, medium dice 1/2 cup
Eggplants, medium dice 2 cups
Tomatoes, medium dice 1 cup
Capers, chopped 1 Tbsp.
Garlic, chopped 1 tsp.
Basil 1 Tbsp.
Red wine vinegar 2 tsp.
Olive oil 1/2 cup
TABASCO® brand Original Red Sauce 1 Tbsp.
Salt to taste
French baguette, sliced into 1/2" rounds 2 ea.


  1. Place diced peppers, onions, eggplants and tomatoes on a sheet pan. Add chopped capers and garlic and drizzle with olive oil.
  2. Roast vegetables at 400°F for 30 minutes.
  3. Place in a bowl and add basil, vinegar, TABASCO® Sauce and salt. Place in refrigerator and chill thoroughly.
  4. Slice French bread and toast in oven. Top each slice with 1 Tbsp. of vegetable salad.
