TROPICAL CHICKEN SALAD WITH HEARTS OF PALM AND PEANUT DRESSING

Ingredients Weight Measure
Chicken breasts, 4 oz. 8 ea.
Peanut butter 2 Tbsp.
Olive oil 1/2 cup
Lime juice 1 Tbsp.
TABASCO® brand Garlic Pepper Sauce 1 Tbsp.
TABASCO® brand Original Red Sauce 1 tsp.
Cilantro 2 Tbsp.
Iceburg lettuce, quartered 2 heads
Hearts of palm 16 oz.
Peanuts, dry roasted 1/2 cup
Cherry tomatoes 1 pt.

Method

  1. Grill chicken until thoroughly cooked. Cool and slice thinly into strips.
  2. Place peanut butter into mixing bowl and whisk in olive oil, lime juice, TABASCO® Garlic Pepper Sauce, TABASCO® Original Red Sauce and cilantro.
  3. Arrange lettuce, chicken and hearts of palm on each plate. Drizzle with dressing and sprinkle with peanuts.
