GRILLED SIRLOINS WITH TOMATO-CHILE JAM

Ingredients Weight Measure
Tomatoes, seeded and skinned, cut in 1/2 4 ea.
Garlic, whole cloves 8 ea.
Green chiles, canned 1 tsp.
White or yellow onion, cut in 1/4 8 oz.
Poblano pepper, seeded cut in 1/4 1 ea.
Olive oil 1/4 cup
TABASCO® brand Chipotle Pepper Sauce 1-1/2 Tbsp.
Ketchup 2 Tbsp.
Brown sugar 1 tsp.
Red wine vinegar 1/2 tsp.
Salt & pepper to taste
Beef sirloin steaks, 8 oz./ea. 4 lbs.

Method

  1. Place tomatoes, garlic, chiles, onions, poblanos, and olive oil in preheated 400°F oven and roast for 1 hour. Remove from oven and cool.
  2. Using a food processor, combine TABASCO® Chipotle Pepper Sauce, ketchup, brown sugar, vinegar, and salt with oven ingredients and pulse lightly to incorporate. Do not overmix or puree.
  3. Season steaks with salt and pepper and grill or broil to desired doneness.
  4. Serve with tomato chili jam.
