GRILLED HAM AND CHEDDAR WITH SMOKY SWEET POTATO MAYONNAISE ON ARTISAN RYE

Ingredients Weight Measure
Sweet potato, baked, mashed 1/2 cup
Mayonnaise 1/2 cup
TABASCO® brand Chipotle Pepper Sauce 1 Tbsp.
Salt 1/4 tsp.
Smoked ham 2 lbs.
Cheddar 16 oz.
Rye bread, thick sliced 16 ea.
Butter 4 oz.

Method

  1. Combine mashed sweet potato, mayonnaise, TABASCO® Chipotle Pepper Sauce and salt and mix well.
  2. Divide ham and cheddar between 8 bread slices and spread each with 2 Tbsp. mayonnaise mixture. Place remaining bread slices on top.
  3. Brush outsides of bread with butter and grill until bread is toasted and cheese is melted.

Yield: 8 servings
