Sweet-and-Sour GREY POUPON Sauce

Green onions, minced 12 ea. 4 1/2 oz.
Cilantro leaves, fresh, minced 3 cups 1 1/2 oz.
Gingerroot, peeled, minced 3 pieces 3 oz.
Garlic, cloves, minced 12 cloves 1 1/2 oz.
Jalapeno peppers, seeded, finely chopped 1 1/2 ea. 1 1/2 oz.
Chicken, ground (white and dark meat) 9 lbs.
Pork fat, ground 1 lb. + 8 oz.
Soy sauce 1 cup 8 oz.
Sesame oil, dark 3/4 cup 6 oz.
Sherry vinegar 3 Tbsp. 1 1/2 oz.
TABASCO® brand Habanero Sauce 3 Tbsp. 1 1/2 oz.
Five-spice powder 1 1/2 Tbsp.
Salt 1 Tbsp.
Coarse ground black pepper 1 Tbsp.
Vegetable oil 3/4 cup 6 oz.


  1. For Sweet-and-Sour GREY POUPON Sauce, combine all ingredients; mix well. Cover and refrigerate until ready to use.
  2. Combine onions, cilantro, ginger, garlic, and jalapeno peppers; set aside.
  3. Place chicken, pork fat, soy sauce, sesame oil, sherry vinegar, TABASCO® brand Habanero Sauce and seasonings in 20-qt. bowl of electric mixer fitted with paddle attachment. Add onion mixture; beat until well blended.
  4. Scoop chicken mixture into 150 (1 oz.) portions. Roll each portion into log. Insert 4-inch bamboo skewer into each log. Flatten logs slightly; brush evenly with vegetable oil.
  5. For each serving, grill two skewers on medium-high heat 2 to 3 min. on each side or until chicken mixture is cooked through. Serve with about 1 1/2 Tbsp. of the Sweet-and-Sour GREY POUPON Sauce.
