COOL AND HOT TOMATO SOUP

Ingredients Weight Measure
Olive oil 4 tsp.
Onion, chopped 1 cup
Celery, chopped 4 stalks
Garlic, chopped 4 cloves
Stanislaus 74-40® Tomato Filets® 1 can
TABASCO® brand Chipotle Pepper Sauce 1/4 cup
Sugar
Cilantro, fresh, chopped 1 cup
Cumin, ground (optional) 1 Tbsp.
Beef broth 2 cups
Red wine (optional) 2 cups

Method

  1. Heat the oil in a saucepan and sauté the onions, celery and garlic until softened.
  2. Add the tomatoes, TABASCO® Chipotle Pepper Sauce, sugar, cilantro, cumin and broth. Raise the heat, and simmer for 15 minutes.
  3. Place the mixture in a blender or food processor and puree until smooth. Strain the soup and thin to desired consistency with wine, additional broth or water.
  4. For a creamy soup, add a little yogurt.

Yield: 1 gallon
