PINEAPPLE-MANGO BROCHETTES WITH SWEET BEER GLAZE

Ingredients Weight Measure
Wooden skewers, soaked in water 8 ea.
Pineapple, peeled, cut in 1" cubes 16 pieces
Mango, green, cut in 1" cubes 16 pieces
Beer, ale or lager 8 oz.
Butter 2 Tbsp.
Brown sugar 1/2 cup
TABASCO® brand Green Jalapeño Pepper Sauce 1 Tbsp.
Dijon mustard 2 Tbsp.

Method

  1. Thread 2 pieces of pineapple and 2 mango chunks on each wooden skewer, alternating.
  2. Bring the beer to a boil in a small saucepan and cook until reduced by half.
  3. Stir in the butter, sugar, TABASCO® Green Jalapeño Pepper Sauce and mustard; continue cooking for 2 minutes.
  4. Place the brochettes on a hot grill and cook for 1 minute on each side while brushing them with the glaze.

Yield: 8 servings
