GRILLED SALMON STEAKS WITH GREEN CHILE–LIME SAUCE

Green Chile–Lime Sauce

Ingredients Weight Measure
TABASCO® brand Green Jalapeño Pepper Sauce 1 Tbsp.
Cilantro leaves, fresh, chopped 1/2 cup
Garlic, chopped 2 cloves
Lime juice 1 ea.
Vegetable oil 1 Tbsp.
Lime zest 1 tsp.

Salmon Steaks

Salmon steaks 4 ea.
Olive oil 1 Tbsp.
Salt & pepper, freshly ground

Method

  1. Place all the ingredients for the sauce in a blender or food processor and puree until smooth..
  2. Brush the steaks with the oil and season with the salt and pepper.
  3. Grill the steaks over a medium fire for about 8 minutes, turning several times, or until the fish flakes on the outside.
  4. To serve, pour some of the sauce on individual plates, place the steaks on top of the sauce, and top with additional sauce. Serve with a creamy risotto or an arugula and tomato salad.
