SPICY GRILLED COCONUT SHRIMP KABOBS

Ingredients Weight Measure
Brown sugar 1/4 cup
Pepper
Garlic
Thyme, fresh, chopped, or 1/2 tsp. dried thyme 2 tsp.
Honey 2 Tbsp.
TABASCO® brand Habanero Sauce 1 tsp.
Coconut cream 1/4 cup
Oil 3 Tbsp.
Shrimp, medium, shelled, deveined, tails on 2 dozen
Lime juice, fresh 1 Tbsp.

Method

  1. Combine the brown sugar, pepper, garlic, thyme, honey, TABASCO® Habanero Sauce and coconut milk; mix well.
  2. Slowly whisk the oil into the marinade. Place the shrimp in a bowl and pour the marinade over them, coating them well. Cover and marinate the shrimp for 1 hour at room temperature.
  3. Remove the shrimp from the marinade. Thread the shrimp on skewers, alternating with the vegetables.
  4. Grill the shrimp over a medium fire, basting frequently with the marinade until done, about 6 to 8 minutes, turning occasionally. Serve the kabobs over couscous.
