CEVICHE DE CAMARONES (ECUADORIAN MARINATED SHRIMP)

Frozen shrimp, cooked
TABASCO® brand Garlic Pepper Sauce
Red onion, medium, sliced very thin
Cilantro, chopped
Tomatoes, medium, finely chopped
White wine vinegar
Lemon juice, fresh
Lime juice, fresh
Olive oil
Black olives
Hard-boiled egg
Feta cheese
Cooked corn on the cob, kernels sliced off cob
Bibb lettuce
Popcorn, freshly popped

Method

  1. Pour the frozen shrimp into a colander and run cold water over them for a minute or two. Drain the shrimp thoroughly and then place them on paper towels to drain off the excess.
  2. Place the shrimp in a nonreactive bowl, add the remaining ingredients (except the lettuce and popcorn), mix lightly and marinate the mixture in the refrigerator for 2 to 4 hours.
  3. Serve the ceviche on a bed of Bibb lettuce, garnished with black olives, sliced hard boiled egg, feta cheese, a slice of cooked corn on the cob.
