LITTLE RED CLAM

Ingredients Weight Measure
Littleneck clam 1 ea.
Lemon, juiced 1/2 ea.
Lime, juiced 1/2 ea.
TABASCO® brand Original Red Sauce 10 dashes
Premium potato vodka 3 oz.
Strained heirloom tomato juice 3 oz.
Fresh grated horseradish 1/2 tsp.
Whole black pepper and sea salt to taste
TABASCO® Dilly Bean, for garnish

Method

  1. Shuck clam and place in shot glass with its juice. Add lemon and lime to shot glass and let sit (to ceviche). Add 5 dashes of TABASCO® Sauce to shot glass.
  2. In martini shaker, combine vodka, tomato juice, and horseradish. Add final 5 dashes of TABASCO® Sauce. Shake vigorously. Strain into martini glass and sink clam and juice to bottom.
  3. Crack salt and pepper on surface. Add bean to garnish.

Yield: 1 serving
