CARIBBEAN CHICKEN WINGS SCOVILLE

Ingredients Weight Measure
Chicken wings, wing tips cut off and discarded and the wings halved at the joint 20 ea.
Canola oil 2 Tbsp.
Salt to taste
Natural-style peanut butter 1/3 cup
Well-stirred canned cream of coconut 1/4 cup
Garlic, chopped 2 cloves
TABASCO® brand Habanero Sauce 1/4 cup
Red bell pepper, chopped 1/4 cup
Dried hot red pepper flakes to taste
Soy sauce 1 tsp.
Chinese five-spice powder 1 Tbsp.
Paprika 2 tsp.
Crumbled dried rosemary 1 tsp.

Method

  1. Toss wings with oil and salt in a large bowl; then spread in 1 layer on rack of broiler pan.
  2. Broil 4 to 5 inches from heat, turning over once, until barely cooked through, 20 to 25 minutes.
  3. In a blender, blend together all remaining ingredients.
  4. Transfer the sauce to a serving bowl set on a platter; arrange the wings around the bowl.

Yield: 20 wings
