Chicken Wings and Marinade

Ingredients Weight Measure
Chicken wings, wing tips cut off and discarded and wings halved at the joint 16 ea.
Soy sauce 1/2 cup
TABASCO® brand Green Jalapeño Pepper Sauce 2 Tbsp.
Garlic clove, crushed 1 ea.
Onion, finely chopped 1/2 cup
Brown sugar 2 Tbsp.
Dry mustard 1 tsp.
Ground ginger 1 tsp.
Butter 1/4 cup
Water 1/4 cup

Pineapple Relish

Pineapple tidbits, juice reserved for wing marinade 1 16-oz. can
Red bell pepper, diced 1/4 cup
Green bell pepper, diced 1/4 cup
Red onion, diced 1/4 cup
Fresh lime juice 1 Tbsp.
TABASCO® brand Green Jalapeño Pepper Sauce 2 Tbsp.
Jalapeño chili pepper, chopped 2-1/2 tsp.
Lime peel, grated 1/4 tsp.


  1. Arrange chicken wings side by side in baking pan.
  2. Combine remaining marinade ingredients, plus 1/2 cup of reserved pineapple juice (from Pineapple Relish ingredients) in saucepan; bring to boil and cool. Pour over chicken; refrigerate and marinate several hours.
  3. Broil 4 to 5 inches from heat, turning over once, until cooked through, 20 to 25 minutes.
  4. For Pineapple Relish, combine all ingredients in food processor, pulse until finely chopped. Serve with wings.

Yield: 16 wings
