BACON, ARUGULA, TABASCO®-CHIPOTLE, TOMATO AND EGG BREAKFAST SANDWICH

Ingredients Weight Measure
Large eggs (or 1-3/4 cup egg whites) 7 ea.
Salt and pepper to taste
Tomatoes, sliced 2 ea.
TABASCO® brand Chipotle Pepper Sauce 5 Tbsp.
Olive oil 2 Tbsp.
Sourdough bread, toasted 8 slices
Turkey bacon, cooked 12 slices
Arugula leaves or watercress sprigs, coarse stems discarded 12 leaves/sprigs

Method

  1. Whisk together eggs and season with salt and pepper.
  2. Marinate tomato slices in TABASCO® Chipotle Pepper Sauce.
  3. Heat olive oil in skillet, then cook egg mixture, stirring slowly, until just cooked through.
  4. Make sandwiches with toasts, scrambled eggs, bacon and arugula.

Yield: 4 sandwiches
