ROASTED CARROT AND HUMMUS SANDWICHES

Ingredients Weight Measure
Store-bought plain hummus 8 oz.
TABASCO® brand Chipotle Pepper Sauce 2 Tbsp.
Olive oil 1 Tbsp.
Carrots, peeled left whole 4 ea.
Country-style white bread, toasted, 7 x 4-1/2" sliced 4 ea.
Curly leaf lettuce as needed

Method

  1. Preheat oven to 400°F.
  2. Mix hummus and TABASCO® Chipotle Pepper Sauce; set aside.
  3. Heat olive oil in heavy medium ovenproof skillet over medium-high heat.
  4. Add carrots; sauté until carrots color, about 5 minutes.
  5. Place skillet in oven and roast until carrots are golden and tender, about 20 minutes.
  6. Cut carrots lengthwise in half.
  7. Spread hummus mixture on toasted bread.
  8. Top each with 4 carrot halves and curly leaf lettuce.
