Ingredients Weight Measure
Low-fat mayonnaise 1/2 cup
TABASCO® brand Habanero Sauce 1 Tbsp.
French bread baguette, 18" loaf, cut crosswise into 4 equal pieces 1 ea.
Yellow cornmeal 1/2 cup
All-purpose flour 1/2 cup
Skim milk 1/2 cup
Catfish fillets, about 5 oz. ea. 4 ea.
Olive oil 3 Tbsp.
Large tomato, thinly sliced 1 ea.
Boston lettuce leaves 4 ea.


  1. Stir first 2 ingredients in small bowl to blend.
  2. Cut bread pieces in half horizontally.
  3. Spread bottom halves with TABASCO® mayonnaise.
  4. Whisk cornmeal and flour in shallow bowl to blend.
  5. Pour milk into another shallow bowl.
  6. Dip each fillet into milk, then into cornmeal mixture to coat.
  7. Heat oil in heavy large skillet over medium-high heat.
  8. Add fillets; sauté until cooked through and brown, about 5 minutes per side.
  9. Place fillets on bread bottoms.
  10. Top with tomato, lettuce and bread tops.
