EGG SALAD SANDWICHES

Ingredients Weight Measure
Large hard-boiled eggs, peeled, coarsley chopped 8 ea.
Celery, finely chopped 1/3 cup
Pimiento-stuffed green olives, chopped 1/4 cup
TABASCO® brand Original Red Sauce 2 Tbsp.
Mayonnaise 1/2 cup
Dijon mustard 1 Tbsp.
White sandwich bread, toasted 12 slices
Turkey bacon slices, cooked 12 ea.
Red leaf lettuce leaves 12 ea.

Method

  1. Combine chopped eggs, celery and olives in bowl.
  2. Mix TABASCO® Sauce, mayonnaise and mustard, and add to egg mixture.
  3. Place toast slices on work surface.
  4. Divide egg salad among 6 toast slices.
  5. Place 2 bacon pieces and then 2 lettuce leaves on each.
  6. Cover with remaining toast slices.
  7. Cut sandwiches diagonally in half.

Yield: 6 servings
